<p class="wp-block-paragraph"><em>Some stories are told with words. Others are told with dirt under the fingernails.</em></p>



<p class="wp-block-paragraph">Meet André. A farmer in the Lautrecois, growing pink garlic on the same hillside for three generations. And meet Caramelo, his dog — who sniffs out moles far more readily than garlic cloves, but who&#8217;s learning, same as the rest of us.</p>



<p class="wp-block-paragraph">Starting today, I&#8217;m bringing you along with them, season after season, in a little illustrated comic strip that smells of soil, of the old lime tree, and of soup simmering in the evening. No lessons, no manuals — just André telling it his own way, with the accent, the humor, and the warmth of the South of France.</p>

<p class="wp-block-paragraph">Pink garlic creates black garlic that is:</p>

<li>slightly floral,</li>



<li>naturally sweet.</li>
</ul>



<p class="wp-block-paragraph">But it dries faster than other varieties, so it must be transformed <strong>earlier</strong>, before the sprout develops.</p>

<p class="wp-block-paragraph">For perfect black garlic, choose bulbs that are:</p>

<li><strong>firm</strong>,</li>



<li><strong>sprout‑free</strong>,</li>



<li>with tight, intact skins.</li>
